While playing the USA in the demo i could never request more than one state, or one core state as a war goal. This means i would have to repeatably declare war against Mexico to unite the present day United states. Am i missing something here or is it impossible to request more than one state for a war.

You request one state upon declaring war, and then add additional demands to it. You can do so by going to Mexico's diplomacy screen, and ensure that you have selected the great wars tab. Then look to the right side and find the option to add a new wargoal. You can continue to add additional war goals as much as you like, but keep an eye on any infamy gains you accrue from adding them, as well as the penalties if you add a bunch of war goals that you are unable to actually fulfill.
