Betas are needed to do tons and tons of historical research which can take many hundreds of combined hours of digging through source material. If you like doing that sort of thing (I do) then the time flies by quite pleasantly and doesn't feel like work at all.
Betas do a lot of proofing (checking spelling/grammar in events, messages and tooltips) which can also take quite a while but isn't particularly paralysing work.
Lots of the events and scenarios are written by the betas. If you like scripting then this doesn't seem much like work either.
Even the playtesting - tring to find things that make the game crash or tweaking balance - is actually immensely rewarding work if you like playing the part of the detective.
