So I think it's about a 5% chance. I'd assume the capital will move and just be happy if it doesn't.

Therefore if:
2 Choices A= 94.4% B=5.6%
3 Choices A= 89.5% B=5.75% C=5.75%
4 Choices A= 85% B=5% C=5% D=5%

IMO becoming Defender of the faith a very very very bad choice.
It costs too much and you only get a CB if some other faith attacks on of your fait, and if you loose a war you loose the title.

It also hurts your relations with other nations of different religions.
