Almost every crusade I've seen has flipped back to Islam almost instantly due to 1 of two reasons:
1.) The ruler may be Catholic, but the Dukes and counts are almost entirely Muslim. Which means that either they will depose the ruler immediately or Muslim revolts will happen constantly until the Kingdom reverts back to Islam.
2.) The ruler is threatened by their neighbors and immediately converts as a defense.
It is very frustrating to fight multiple crusades for the same place only to have it collapse within two years.
