Why do greek pops assimilate in reclaimed cores, instead of Turkish getting assimilated?

What do you mean? Do your greek POP's assimilate into Turks on Greek soil? (Post Crisis)

That does not sound right at all.

In thessaloniki, Greeks were the biggest minority group, about 43% of the city, with turks being second in 35%, when I peacefully claimed it.
However, 20 years later, in 1890, Turks are 2-3% more than Greeks, the 16% Sephardim minority is the same (16%) and the Bulgarians are lessened to something like 10%.

In greece as a whole, in 1870 there was 77.13% greeks and 15.86% Turks while in 1889 the percentages were 76.22% and 18.60 (!!!). This sounds like the Bulgarians and Albanians assimilate into Turks instead of Greeks.

The fact is, there's no turkish majority province! However, they keep increasing their pop.
How can make them assimilate more efficiently? I have a pretty good literacy rate (85%). Does the religious policy have any role at all?

No; but citizenship policy does contribute to assimilation.

I can't stress enough how trigger happy the AI is on releasing their colonies. It happens 100% of the time and it's on the first months of the game. Britain balkanizes their colonial holdings only a few years into the game and Portugal releases pretty much every single overseas territory by 1850.

Yes... that will be fixed in the patch in 1-2 weeks.

Yep, but you shouldn't choose that party only based on citizenship policy.

Yes, I know, but I want to focus there. Since my state capitalist party enabled me to have a decent industry, I can now turn to other aspects.

I saw a post by podcat saying that they were fixing the dominion spam, and another post with someone saying that they should expect the patch in 1 week... but podcat sad more likely 2 weeks... let me look around to see if I can find it again.

So, playing as Austria, I defeated the Ottomans in two wars (loving the changes to the military, occupation is going so fast now), releasing Bulgaria (which ended up being a lot larger than I expected - I forgot they had that many cores) and unpuppeting (I'm sure that's an actual word) both Wallachia and Moldavia, which resulted in Romania forming. Now, I have Serbia and Romania in my sphere, but they refuse to ally me because I hold some of their cores.

Now, my question is: Is there a way for me to grant these nations their cored provinces and allying them without hoping for a crisis to happen? Is it possible (and a good idea) to free and sphere all remaining Balkan nations from the Ottomans to form Yugoslavia?

No, unfortunately you have to cheat to do that.

Open the console(Usually § or Alt+21 or Alt+0127 depending on the keyboard layout in your country) and type:
Code:
changeowner [TAG] [province id]

Change the current owner of [province id] to the country TAG specified.

If you don't know what the province id is you can type:
Code:
showprovinceid

This will show you the province id in the tooltip when you hover the mouse over a province.

Unfortunately you wont get any relationship boost by doing this so you have to go into the diplomacy screen and click increase relation so you spend some of your diplomatic points and it feels less like cheating. :p

Yes... that will be fixed in the patch in 1-2 weeks.

He said nothing of the sort. He said he'd work towards making them "a little less trigger happy" - Don't overreact too much. It's a work in progress, not a magical patch.

And he also said "Possibly" - again no guarantee about a timeframe. It's only a hopeful guess on his part.

Just to clarify. :)
