This might seem like a really minor issue, but has been bothering me: Do vassals, or even the AI, ever press minor county claims against anyone?

To clarify, with minor county claims I mean when you own the main holding in a county, but some/all of the holdings under the main holding are controlled by a different power.

I tend to be very particular about having all minor holdings staying within my realm, so I tend to push these CBs a lot even though I know that from a rational perspective it probably is not worth my time from a time/reward point of view.

Once I reach Empire-level with my dynasty I usually only attack larger enemies around me and let my vassal-Kings vacuum up anything weak around me, but then I noticed that minor claims where never being pushed by them, which meant that after I clicked through a lot of my provinces I noticed there were a couple of independent minor holdings since I had already destroyed their more powerful lieges they had outside my borders.

I know this is a really unimportant question in the large scheme of things, but I was wondering what others had experienced with minor holdings?

To be honest it would be nice if once you captured a county any holdings not held by the defeated party automatically became independent maybe after 5 or 10 years. That way you could go to war or offer vassalisation without the drama of fighting a huge war over a tiny piece of land.
While historically incorrect it doesn't make sense to have a couple of land locked Muslim cities in the middle of a Christian country.

As King of England, my elective heir and Duke of Normandy has declared war 3 times against neighboring counts outside my territory, successfully annexing one of the provinces and adding them to Normandy. The other times ended once in a white peace and once he won, but didn't receive territory.

This isn't about getting them to conquer counties, it's about them owning half the holdings in a county and then trying to conquer the rest.
