Are we able to back rebels in war, and make deals with them? For example, I would offer them to join their war (or give them war subsidy) in exchange for them to be my vassals?

From what we've seen on screen you won't be able to join a war that's already inprogress. So you won't be able to do anything about a rebel faction trying to break free!

I wish. Sadly, it doesn't seem possible to alter diplomatic status during war... and rebels are usually at war (until they succeed).
