The question is given in the title..

What do you think is better? Vassalizing the Pagans/Muslims and let them be in the empire, or occupying the provinces and grant them to a Christian guy.

What are the consequences of each option and in a conclusion, which one is better?

Annexing gives you way more badboy than vassalizing. Vassalizing makes them eventually have an event that'll convert them to Christianity. However, putting your own guy up, preferably from your dynasty, can be good if you have loyalty problems.

You could also be a bit gamey and vassalize, then revoke titles to get the land without much BB gain.

It depends on how I feel, but usually I'll vassalize them.

It depends on how I feel, but usually I'll vassalize them.

To be fair, vassalizing them and then revoking their titles will likely give you some loyalty problems if you have other vassals. So you can end up shooting yourself in the foot either way. :D

I'm not too worried about getting the Title (unless it's one of those non-creatable Duke Titles). I Vassalize unless I specifically want that province for my own Demesne (or plans for a Dynasty member). What with them being of a different religion (and most likely in an area I don't have the King title to), they'll eventually rebel and I'll get a claim on their titles anyway.
