Will my sectors build every unity building on a planet if I colonize it and just throw it into a Balanced Sector? Or am I going to be set back every time I assume the Sector has my best interest at heart?

The options you give us are:
1) will the sector do 100% what I want? OR
2) will it screw me over

Sectors hardly ever do exactly what you want. However you could build the buildings you definatly want on a planet and then hand it over. The ascension perk that gives 5 sector systems is great for this (initially you won't even need sectors at all)

100% what i want is just the 3 buildings that give unity without perks. The Symbol of Unity, Autochthon Monument, and the Paradise Dome. It would be silly if I have to build these on every planet and then uncheck 'Redevelopment' just to ensure I'm not getting shorted on what I see as the second most important resource in the game. Research as a whole being the most important. And I agree with the Sector Systems part, but I had 9/14 when I started my mass expansion and added 12 Planets in one mass colonization and then 13 in one war and 13 more in another war. I would rather not have to wait until 5 pops to put a planet in a sector if possible.
