My units keep transgressing into other theatres. This is very annoying for me, all I want is for the AI to manage the armies and for them to only stay in the area I've designated as their theatre zones but they keep moving to different areas in other theatres, to fight partisans or line up on certain borders. How can I fix this?

I've noticed similar odd behaviour in my Soviet game. I've switched on AI control at Army Group Level (what I call a Soviet Front) but I've noticed all sorts of weird deployments of Divisions relaitve to Corps, and Corps relative to armies. There seems to be a general trend to spread deployments over a ridiculously wide area, so Coprs and Armies overlap even though in many cases this places Divisions outside communications range of their HQ's. I tried to regulate this by placing more objective markers down for each Front to clarify exactly which provinces they were meant to be defending, but they seem obsessed with defending other areas that are clearly not their responsibility.

I've more or less decided that I can't trust the AI when it comes to unit deployment. It's not a problem when your not at war, but I can't let it do things like that during combat.

The thing is, I prefer to manage my units myself. But I am invading the USSR and it's simply too gargantuan a task to do myself. So I have to use the AI, but true to its name Paradox interactive has created a game where simultaneously I have to manage it myself.

Basically I think what happens is the AI is really finicky about VPs if you give them VPs, even if they're not objectives, they'll always default to being paranoid about that VP. So, if you do have AI theaters, you have to give them ONLY THE BAREST MINIMUM of land to cover and they'll stay where they should - then have a human non-ai theater that sucks up any new land keeping the AI down to only managing a strip - then the AI will behave as intended more or less unless you just totally route your enemy.
