these were "just" shermans (their chasis), but with bigger guns i.e = tank destroyers.. so why cant we attach tank destroyer brigades to them?

I can't say I know the details of Shermans being upgunned to M10s, but in the case of Panzer IIs being turned into Stugs the turret ring was unable to support a gun larger than 20 mm, so they took out the entire turret system and replaced it with a 50mm gun in a fixed mount. I imagine it was the same with the Shermans, so they were not just Shermans, a fixed turret changes their use entirely.

Is a sheet like this one included in the game, so you will know before you are producing if you can use this brigade with that unit?

Put the pointer over the attach brigade button and you get a list of what brigades are attachable.
