Is it possible to turn off convoys for particular routes or at least stop auto generating convoys?

Yes. In the Production screen, below the sliders, there's a little thing showing your convoys, and you can cancel them from there.
More conveniently, you can leave the route itself in place, but remove all of the ships from it until you've got the route secured.
