I've gone coin-digging and found a whole bunch of symbols, but I have no clue what they're for :/ maybe someone knows more?
I stumbled totally upon a page that explained Karaman's symbol (it was explaining why the Ottomans added the six pointed star that looked like that to their coins, saying how it was the Karaman symbol)

Karaman symbols

I've found these informations about the symbols used by Karaman:
ONGUN BIRD
In the historic treatise 'Oðuznames' and in the 'Divan-ý Lügat-ül Türk of Kashgarian Mahmut' it is written that the symbol of the Karamanoðullarý was the 'Ongun bird'. This bird lived wild in the mountains and was a hunter. It was also accepted as the Sultan of all birds. It is not exactly clear what type of bird the Ongun was but today researchers generally believe that it was a species of falcon. The Karamanoðullarý used this symbol on coins and medals.
SIX POINTED STAR
The ancestor of all Turks, Oðuzhan, had 6 sons. After death of Oðuzhan the sons met inside his golden otað (large sumptuous tent). They pitched 6 white tents to symbolize these 6 sons around the large sumptuous tent. Then to remember this special day later on, they symbolized it as a six pointed star. This figure was used together with the Ongun Bird on coins and medals.
