Trapping rival's armies

So, I got the entire French army of 58 regiments trapped in Ceuta while they were on their way to conquer Tunisia. They don't have any transport ships.

But are they going to declare war on me (Castilla) to regain access to my provinces?

That shouldn't make any difference in the decision making of the AI. They still might declare war for any of the "normal" reasons though.
Also, make sure not to give access to anyone else when France is at war, or they might get out via the shared access.

They won't. Those cowards only declare war when Castilla is in Civil War.

Yes, that's how I got them there in the first place. Ottomans requested access from me to get Tunisian army to French possessions, but when Tunis were beaten and started retreating, the French came after them and got themselves in this mess. I refused access requests from both sides' allies. Now the war is over and I'm just waiting for my Spy Network to finish to support rebels across France.
