I have surpassed 50provinces as Sparta. I now have a law available to transition to an Empire. I know that this will allow me to go from3 national Ideas to 5. However, I have been unable to find anything listed about it.

Can anyone tell me what the pros/cons are of trnsitioning to an Empire from a kingdom?

Do it! I have done it three times as soon as I could. The ideas are the big gain. You get some stability and popularity too as I recall. There are no negatives, but I do not know about Romans with a senate. However, you are Sparta, so go ahead.

As a republic there might be some negatives, for instance the transition to dictatorship will cost you 20 tyranny I think, and then there are the additional stability losses to boot. But go for Imperium, it is the best government form since you have so many ideas.

Go for the empire option as a monarchy unless you have roleplaying reasons not to or are playing a despotic monarchy and in a period of mass building in which case you should wait until you've built most of what you want to build with the 33% discount.

In my experience, by the time you're a 50+ province country, you can pretty much steamroll anyone you want to, and any economic or military bonus means very little. The biggest threat then is internal unrest from disloyal characters. If you had a dictatorship that gives loyalty bonus if I remember correctly, you may want to think before you go Imperium. But if not, go for it.

I think overall monarchies always have an advantage over republics because of the many bonuses they get from the ministers. But of course it depends very much on the quality of your courtiers and, most importantly, your king.
