Can someone explain to me how Titular Titles work? What is the point of them? Is it better to go after a non-titular title if you can? I notice they do not have de jure territories, is that the only difference?

Titular titles are a fairly reasonable way to grab a royal crown in ck2plus, not sure in vanilla. A titular kingdom will become De Jure if you can hold on to at least every province of a single duchy.
If you feel like being gamey, a titular kingdom on elective will basically allow you to handpick your successor as you're the only one with a vote.
Titular Title can basically give you a good prestige bonus (I think it is about half as much, as a dejure title) without the ugly side effects (like your dukes wanting that title, if it is a secondary title etc.). In some games I waited for dejure kingdoms to drift into my primary kingdom, before I created it, but by now I rather take the dissent of the dukes and gain the extra amount of prestige, specially since you can get it more than 100 years earlier that way.
If you're only a duke, any kingdom (even a titular one) can change things for you drastically. Once you're a king, you can start vassalizing dukes. This is a big deal.
What land goes along with a titular title? All the territory you control when you make it or no territory at all and it is merely a title, without land to back it up?
There is no land associated with a titular title.... If there was, it would not be a titular title but a landed title.

A titular title can become a landed title due to dejure drift, just as a landed title can become a titular title due to dejure drift, but in both cases it takes at least 100 years. (and only your primary title can dejure drift, so if you have a titular title as a secondary title, it will forever be a titular title)

The only difference is is that titular titles do not have a dejure and that they generate less prestige until they get a dejure. If you do not need the dejure claims you want your secondary kingdoms to all be titular so people do not try to take them from you, and they do not have different succession laws either.
This has been changed(in 1.06, I think?). Now all your direct vassals vote for Titular Titles if they are on Elective
Note that there are very few titular titles that can be created in unmodded game (Kingdoms of Nubia and Cyprus, Latin Empire, "duchy" of the Sunni/Shia Caliphate), so using them is not a very good tactics.
The can be created at game's start. All titles can technically become titular. Except Empires that aren't the Latin Empire.... the game crashes if you look them up after they've drifted out of existence.
