When i played with France i ended up with the Absolute Monarchy rather then a republic, but that only came up when i got a king with high skills. Imo playing as France it's prolly easier to break with the vassals then like me, keeping them and hoping for a diplo-annexation. I went for the last and had to wait for nearly 200 years be4 i annexed the last "french"-vassal(Had Savoy, Lorraine and Milan as Vassals also). Getting into a alliance with Castille is most likely also a good thing, for it will secure the southern borders.

you can revert back to a monarchy if your capital is occupied for a few years, but its unlikely to be bourbon. Anyway about the war, you should probably scorch your provinces and try to lure them into fighting in some of your hill provinces were burgundy once was. if they dont take the bait then they will still be depleted from occupying scorched provinces. Also you are probably going to lose to britain's navy so be prepared for a large blockade! :)

also there is a ton of revolution specific events that you should watch out for that can be found here
