In retrospect I probably should have done this with the Mongol Empire Scenario (which I only discovered after and love), since I could have gone with my first choice of 'Dublin' (Meath) then and in a way I might have had it a bit easier.

I wouldn't say that - just wait till England have hit a bad spot (revolts, distant wars against powerful enemies, etc) then grab those two English-occupied provinces for Munster-Leinster!
