I know guerilla wars were not exactly the norm in the EU time period, but I was thinking that some sort of (daily, please
) attrition in provs with revolt risk would be a nice summary of this mode of combat. It would not require any huge change in the engine, and should still be possible.
Think Gustavas Adolphus on his marches hither and yon in Germany with every peasant around trying to cut the throat of any Swede in sight. I think the Irish used this some as well, and in the south the Americans did in the rev war, even if that is at the very tail end of the period.
