Thoughts on a "progenitor race" playthrough?

So what I'm thinking about for one of my first games of Stellaris is to start a large map with no other AI empires. I would guess Fallen Empires would still be possible to spawn, but this would mean that the only other AI empires would be ones who manage to get FTL after the start of the game.

One of the reasons I want to do this is because for a large amount of time all of the anomalies will be mine! Besides that, it might be fun to play like the protoss from starcraft as protectors of life in the galaxy.

Anyone else thinking about playing this way? I'd love to hear people's thoughts and what ethos/traits they'd pick. I could also see it fun to do this type of thing with a medium 2 player multiplayer map with one side being xenophobe enslavers and the others xenophile protectors and they could fight over the fate of life in the galaxy.

I would first want to see some sort of tech regression DLC/mod introduced, (I've outlined such a system a couple of times before, not going to do it again here) otherwise the game would very quickly become dull as you and your fragment empires would just have perpetually improving tech. And upstart empires could never pose any kind of threat.

My first game will be like that. I expand rapidly and explore. Then I will deem a few systems as Holy and pretend to be a fallen empire. Then once an AI decides to colonize in that system, I will reemerge and go on jihad/crusades/environmentalist war quest to get people off of those planets. Then expand again as I deem these younger species who pollute whole worlds deserve retribution. Muahahahaahhaha

Yeah, everyone being at max tech by the time the galaxy gets colonized for an interesting "mid-game" experience would be boring in my opinion.
