Most Europeans armies at the time after the Fuedal age were quite professional- many were career soldiers not neccesarily farmers.
With absolutely no loyalty to anything but who payed the most for the least amount of likely death, if armies are getting stackwiped the soldiers are gonna desert.

eh to some extent yes but for the most part a Mercenary company that switched sides too often found itself without an employer rather quickly.

And while this is true for actual mercenary companies, this is a time of professional soldiers but not professional armies most of the soldiers who signed on to fight signed on alone or in small groups, these would be the "national" army although nationality would generally be very varied. However that's beside the point having stacks re appear and then fill up just wouldn't work in an acceptable way.
