There have been a significant number of changes done to CK2 that have not been for the better in my opinion. Many share that sentiment which is why all the game rule options were added I think. So it's possible to revert some of the changes but, not all of them.
I am not a new CK2 player. I've been playing since day one so I don't think my opinion is ignorant. There are some more things that I think should be added as game rule options. I currently use mods (when they are up to date) to achieve some of my wishes, but I think they should just be part of the vanilla game in the form of game rule options. I will list things I can remember off the top of my head at the moment.

- An option to enable all of the "Ambitions" that were removed when Way of Life and Conclave were released. An interesting roleplaying element that made your character feel like a person and should not have been removed.
- An option to enable all of the Events that were removed when Sons of Abraham, The Old Gods, Rajas of India, Way of Life, and Conclave were released. The removal of this massive amount of Events was a huge mistake. They added lots of flavor to the game and helped to hold off feelings of boredom and repetition.
- An option to enable the Decisions that were removed when Way of Life and Conclave were released.
- An option to enable the old portrait frames that were removed when Horse Lords was released. The new portrait frames were universally disliked and no one wanted them to be changed in the first place.
- An option to enable all DLC music tracks regardless of culture or religion. I've paid a lot of money for music tracks and I want to hear them all.
- An option to enable all of the old Laws and Obligations that were removed at some point (can't remember when). This includes Crown Authority, Internal Peace, and Vassal Obligations that actually make sense and are not confusing and are actually worth changing. I might be forgetting other Laws that were removed.
- An option that entirely removes the restrictions of Way of Life.
- An option that partially removes the restrictions of Way of Life. For example, instead of previously existing gameplay being separated and locked behind a paywall and long cooldown, all of the gameplay should be available to your character at a basic level. And your chosen Focus unlocks more advanced/higher tier options.
