There is a big trend to in Paradox games to add and improve, but fixing minor things is easier and as the saying goes its the little things.
1. unchangable divisions
Some national foci and decisions give you divisions with fixed templates that you can't even disband (Manchukuo can recruit bandits for example and Germany has foreign SS-units that it can recruit through decisions if it holds the corresponding lands, there are various guard units that can be raised...)
Since you can't disband them nor change their often lackluster templates the only way to get rid of them is to order a suicide attack.
2. terrible tank models for most nations/terrible generic tank models
Microing tank divisions is key in learning the game (Spanish Civil War) and one of the most fun things to do but if the models are ugly and even tier 3 tanks or modern ones look like like their 1936 versions that takes a lot of fun away.
I even decided to get a license for Modern US tanks in my China game but alas it doesn't work, still uses the chinese (generic) 3D model, (also licenses suck because improving them takes a lot more XP)
3. air defense
Setting up fighter squadrons to keep the enemy bombers at bay is quite the chore, that we still don't have something like the garrison order for planes to have them automatically relocate (thus need fewer planes and conserve fuel) as needed is just a waste of time each game.
4. Germany recalling its advisors (China specific but there are examples elsewhere too)
In my no historic foci game Japan went neutral and Germany teamed up with a monarchist UK. I had good relations with Germany but advisors were recalled again and again which locked me out of the part of the focus tree that leads to the chinese general staff (had to roll back the save about a dozen times to finish it) - still officers were eventually recalled afterwards.
Having parts of your focus tree be exclusive to things totally outside your control sucks especially if they make no sense and you're left with no other angle to play even though you have plenty of ressources at your disposal.
5. lacking economy
Considering the focus on production, build up and the war for ressources the way that economies are handled is wrong and all over the place with certain nations getting the agrarian society modifier, others foreign owned ressources as DLCs get made but there isn't really a holistic approach to these issues.
Equipment piles up into senseless numbers and infrastructure is maxed out quickly and effortlessly everywhere if you just get enough civilian factories, there is no adantage to the civilian economy over a war economy and no sense of rebuilding nations after WW2. There is nothing but the often very high limit of manpower to restrict the construction of battleships and planes.
6. default division colour choices
like where is a nice red, blue, green, yellow, black, grey, white, brown, orange ?
7. almost no minor border changes/peace without total conquest (KOREA bug)
Good luck getting Macau or worse the French or British treaty port as China without a major conflict. China's white peace with Japan is also broken in at least the two regards I experienced in my last game - getting it is great and totally sensible BUT if you control the state of North as wells as South Korea when you accept the peace the Korea that will be released can't be justified upon as both states are considered under chinese control (you can even built in them and they are occupied by your troops) The workaround ist to only snake into South Korea to trigger the peace event and quickly withdraw to let the Japanese regain control before accepting it (about 10 days before the event times out).
The 2nd bug about the peace I experience was that Japan joined the Axis, when I declared war on Germany Japan joined but immediately offered peace again since the held no land on the mainland.
There should be more ways for wars to die down as they grow pointless (USA vs an Axis that conquered Britain and the USSR) for example or cold wars to develop if nations with different ideologies and bad relations are neighbours.
That you have to conquer the enemies capital + a bunch of other victory points to get a stripe of land or even just a ceasefire/white peace makes no sense.
8. Senseless shuffling of troops on frontlines and too little use of strategic redeployment + no reserves.
sometimes that just makes me delete the whole frontline and order them one by one as it's just a pain to watch.

It's well known that Germany is really bad at making these judgements. In this game Portugal made the worst moves through in one (discarded - Korea bug) version it declared war on me though it had no means to attack and even though it was fascist hadn't joined the Axis, in the other version it attacked some nation in Africa and was taken out within days by the Greater German Reich.
But in the end I managed to get my Chonky China.
