There really ought to be a way to tell an invitee to your court that you want to give him land

I almost always give away land only to my dynasty and as I get old I tend to revoke any land that is owned by a person who isn't part of my dynasty.

One thing that bothers me though is when I want to invite a dynasty member to my court to give him land, but he has no desire to come to my court. If I could tell him I want to give him land I'm sure that would change his mind, but theres no way to do this under the current UI.

No need to.
Just give him the title, assuming he is in your realm somewhere.

The issue with this is it would make it even easier to find claimants, land them and press their claim.

The game needs to support tracking suzerains on a per-title basis. Then this rather gamey and overpowered tactic wouldn't work anymore as the claimant could be a count under you and a duke under Karl Karling at the same time.

Totally agree, things like William the conqueror tearing Normandy out of France after the 1066 invasion are irksome.

One of the upcoming game rules regards invitations to court - the default option is restricted, where characters will only join your court under very special circumstances. So, I think there will be a way to easily invite anyone who don't dislike you, but that might block off achievements.

I thought William of Normandy was never a vassal of France?

They were called normans because they were North men. IIRC Normandy was like brittany, regional a part of france but never a proper vassal

According to the wiki:

"The Fiefdom of Normandy was created in 911 for the Viking leader Rollo (also known as Rolf).

After participating in many Viking incursions along the Seine, culminating in the siege of Paris in 886, Rollo was finally defeated by King Charles the Simple. With the Treaty of St.-Claire-sur-Epte, Rollo swore fealty to the French King, converted to Christianity and was baptized with the name Robert. Charles then granted Rollo territories around Rouen, which came to be called Normandy after the Northmen (Latinised Normanni)."

I'd also add that Brittany was never a French vassal nor a French territory until a certain point much later in history.

another nice feature if you could see something like the thumb symbol (up/down/ "open for bribe") in the "invite to plot" screen to make it easier to get the people one can invite.
