Something else to consider: showing the Atlantic coastlines can be a reminder of how the continents used to be united into a single piece.INTENTIONAL. No favoritism shown. Mid-pacific centering would be even better, but then it would difficult to tell it was Earth and not a generic ocean planet.
The UN has apparently asked game companies not to use their flag. I don't know if it is a legal decision or a matter of respect, but either way, that flag isn't available.Why would it be forbidden to use the UN flag? Other paradox titles use IRL national flags all the time...

The UNE flag is centered in the South Atlantic, which means the people from a large majority of the planet's population are unrepresented. All of Asia, North America, Europe, etc. are just not on the flag of the government which supposedly represents them all.

You know, while I don't think the UNE flag should be changed to this, it would be cool to see that emblem added to the Human emblem category.
If we made all Planets flat we could fit all of earth on it!
Slightly more seriously (though not by much more), I remember seeing that hoi4 supported dynamic portraits/sprites. I wonder if Stellaris supports this for flag entities, too? This is a sci-fi game, we can do better that static flag emblems. Animated flag emblems could be an interesting idea.

I really dislike animating things that don't have to be animated. It's very distracting for me. I'd rather keep a static logo. As a South American, I've put up with eurocentric projections for long enough. I even calculate my own wall clock time as an offset of a British timezone. You can surely endure an americentric flag in a sci-fi game without calling it problematic, especially when the reality of our world is quite biased towards eurocentrism.
