well maybe attacking one of the allies and separate peace-ing for alliance brakes? surely they aren't all allied to each other? Then again, all of east Asia seems to be made of sizable blobs at his point, so any other alliances they have will be with somebody powerful...BTW, who wants to attack them?

Well, I stopped the game just after I took the picture - I was probably more powerful than the whole alliance - and fighting it would probably not have been very difficult - but I was puzzled by the fact that Mewar was able to ally so many large countries (all their powerful neighbours actually).
Going for Jerusalem-achieve, bunch of nations decide to jump Ottomans, 4 separate wars, so I just quickly snatch two provinces. After all wars Ottoman does this:

In my 1.17 game as Tver, I witnessed a war between the Ottomans and Moldavia (with no other participants). The Ottomans were the aggressor.
Ottomans: 67k (largest army in the world, ranked 1st in military), Moldavia: 12k. Equal military tech level (10), neither in bankruptcy and neither seem to have any condottieri. Place your bets.

The seriously impressive thing about them is that I'm pretty sure they were annexed twice over the course of the game and just kept coming back!

If that question was about the Ottoman-Moldavian war, I really don't know. I wasn't allied to either, so my vision was limited. My only guess is that the Ottomans had a substantial part of their army trapped somewhere (like Egypt) or the AI was just not being smart about sending troops to the front.
While I only have 36 hours into the game (as according to steam) I've never seen this happen:
