Just to clarify, the zombie thing i added was "a nightmare" that Sophia had, i'm not adding the zombie mod ;DI say with the zombies, the Aztecs invading would be a bit too much to narrate and for the health of the map. That's just my two cents though.

You can set Steam not to update automatically. Right-click on CK2, click "properties", and select the "updates" tab. Change "Always keep this game up-to-date" to "do not automatically update", and you can finish the game at your leisure.
Doesn't that not work though? The one time I tried using it the game proceeded to update anyhow. What I did what just not launch Steam at all, and play the game from the launcher in the folder.
Oh, and my vote is not to enable Sunset Invasion, and as interesting as it might be, no Zombies either.
EDIT: According to the 2.0 Change log, older save games should be compatible.
You should totally try to inherit the HRE!
My eldest son is the heir, but Alexios is the young genius, and the chosen Heir in the east. Gregorios and Alexios will inherit one Empire each.
