So as far as I know Venice is the only nation in the game that has an event concerning jews. This is quite I don't know odd since although the most famous Dutch Jew (even if he was a secular one) Spinoza has his own event the rest of the culture is completly unrepresented.
So the jewish people in Europe were basicly divided to two different cultures the Sephardic and the Ashkenazis. The Sephardic Jews originated from the Iberian peninsula and were expelled from there due to the Inquisition. Atleast some of them were merchants and became quite wealthy and prominent in the dutch society. Heck some of them became major shareholders in the VOC.
The Ashkenazis, of german and polish heritage, on the other hand were quite poor on the other. By profession they were mostly farmer, but some became merchants and glass cutters later in game time. They came to the United Provinces after the Peace of Westphalia which in practice established the United Provinces as a safe haven for the Jews.
In general the dutch society was very tolerant by the standards of the time towards the jewish people. Force conversions, although not completly unheard of, were not common. They were allowed to organize their own court systems. Some cities allowed them complete rights of citizens, others allowed them to practice their profession and some did not allow them inside. It was inconsistent, but in general better than anywhere else in Europe. There was incidents of course, but they were just that incidents.
So what am I suggesting? I don't know. I just would be nice to see to see the fact that the Jews weren't hanged as Christ Killers when ever found, but were left alone to be demanded to be hanged by the christian priests.
