Every time a game makes major changes like this, some people won't enjoy the new version and will have to move on. Even if the game's update has no quality issues and the direction is perfect, there's no avoiding this. The new direction of Stellaris does lose a lot of people who wanted to play a space 4x game on the simple side. However, it feels like most of the core player base is very happy with the new direction and mainly wants to see quality addressed, especially AI and sectors. I'm sure the developers are sad to see people go, but if you want to make a game better, it's unavoidable at times.
Stellaris is pretty unusual, since they give players the option to go back and play the old version. That's more than most games give you. If you loved pre-2.2, you can still play it. In many other games, especially online multiplayer games, if you loved old stuff that's been reworked, all you have is your memories. So if you truly can't stand the new economy, make use of that option or move on to something that's a better fit. If your issues are quality issues, have some patience or check in later when those have been fixed.
