Just started playing and was wondering if it's possible to conquer more than one province per war. I pretty much occupied all of the Latin empire but only received Constantinople once I achieved 100% war score. Am I doing something wrong?

There are many ways to take more than one county, I suggest you read the wiki because the possibilities are really varied (almost every culture, religion or government tipe have an especific casus belli to target multiple provinces)

You only get what your CB was fought for. Unlike Vicky/EU... you can not renegociate peace deals depending on your warscore. Typically you need 100% to enforce your demands, no matter what they are (the larger the goal, the harder it is to get to 100% typically).

Holy war or claims over duchies (inherited from parents OR random chance of fabrication if you have a skillful chancelor), kingdoms and empires (inheritance only) are the most common ways to get large chunks of lands in one go. You have also more uncommon CB depending on your religion/culture (Muslim can use CB for an entire kingdom, same if you have horde culture, germanic pagan can use prepare invasions CB,...).
