The Hagia Sophia is of immense significance to both Orthodox and Islam. In the time frame of CK...It could be considered the most important fixture of the Orthodox world.
The original objective was to re-take Jerusalem. Except for Reynald de Chatillon and his attempt on Mecca there were no serious plans to capture the city. Might have just been because it was not operationally feasable to do so, or maybe the Christians just didn't care. As long as only Christian states are playable there should be no great reason to have Mecca on the map.

Well thats because the Crusades in the end lost there foothold in the Holy Land.... I was assuming that if the Crusader states were held in the Holy Land permentently (or longer) eventually the Pope would decide to push forward towards the heart of Islam.
