I have all expansions through steam, yet i recently switched from a PC to a mac. I no steam doesn't carry DW on mac, and I know you can buy Chronicles though the app store and at Gamer's gate, but other than completely buying the game again, is there anyway to get DW on my mac, considering I have already bought the game?

If you have all the expansions on Steam I don't see why you can't just load them as normal since Steam games are multi-play: when you buy for Mac you also get the PC version and vice versa, at least as far as I'm aware.
As the OP mentions, this is not true with HttT/DW; those do not have a MacOS version available on Steam.
I don't know of any real alternative to re-buying the game other than running the game on Windows in a virtual machine or with bootcamp.
The PC and Mac versions of EU3 are written and sold by different companies (Paradox and Virtual Programming), so I'm afraid there is no automatic right to get one free if you have the other - VP did not receive any of your money when you bought the PC game, so have no motive to give you the Mac version for free. You pretty much have to buy EU3 Chronicles anew, or as the others say run your existing copy in Bootcamp, Fusion or Parallels.
This changed with CK2 as Paradox wrote the Mac version too, and I'd assume that will continue in the future with, say, EU4.
