Hmm... Africa could be a nice target.
If only I'd discover the Incas and their gold... I would go NOM NOM NOM on them.

But the right provinces in Spain could be good. I guess overseas income (Colony income - I've forgotten what it's called) could be poor-to-OK, but the production income if the provinces have the right products could be good. And with Spain you can only be attacked from some many directions if you protect some sides with the Ocean (meaning you won't be attacked on all sides at once probably). And if the AI tried to launch lots of little 1-3 armies against you from transports, no problem. I say you have to strike when it's possible to take advantage of Spanish weaknesses.

This is probably the best idea. Like Enewald said, things in Europe can get messy fast.

I would leave Europe alone too, maybe with the exception of GB. You could start by taking the Brittish Islands as a sort of beachhead for the final conquest of Europe. There is no doubt that Incan gold would be better though if you can get there. Do you have Quest for the new World?

Bohemia is on the edge of collapsing. They're at -2 stability, and constant rebellions.

In April 1573 Great Britain makes a "Colonial Conquest" on us.

They pay the price.

Now, somewhere around here, Portugal collapses.

Nothing strange here, oh nevermind then. Wait... what?

This will provide me a good base with some troops (6,000 formerly rebel troops in that army).
I make peace with Great Britain when I'm done with their colonies in January 1576:

In the next month, Morocco wants to open market with us. I refuse, I don't want more competitors to my CoTs.

Portugal refuses to agree to the fact that I control Alentejo and Algarve:

I destroy their army and proceed to siege Lisboa and Beira. Beira falls in October.

Reverse colonization! Portugal isn't conquering the primitives, the primitives are conquering Portugal!

I take all their provinces in Europe. They still have some in Africa.

With a monthly income of 5 ducats (yes, MONTHLY) and somewhere around 70 net gain per year, I'm sure I can afford European provinces.

I generate 1.10 colonists/year, but for now I've used them to turn the conquered colonies into cities.

Looking promising in North America, you don't need too many more colonies to seal the entire East Coast. The Portuguese rebel thing is just silly! Could you hope to hold on to those lands against Castile?

Also I'm surprised by NTP - have you taken National Conscripts? I seem to recall always being worried about manpower.

I've been trying to play HOI3 but I'm really struggling to get into it. I might have to fire up In Nomine again but no pagans!

I started by following your pattern of NI's (or similarly).

HoI3 has great potential, check my Inkwell and read my German AAR.
