Please explain your issue is in as much detail as possible.
Game crashes the second I get to the main menu, which is odd because I was playing it just a couple of days ago. Tried restarting the console several times, uninstalling/reinstalling the game numerous times, even deleted all saves and the reserved space (for mods I assume) on both the console and the cloud, but to no avail.

Can you replicate the issue?
Yep, happens as soon as I get to the main menu.

Same issue here.

Is there a way to disable mods without launching the game?

Mods shouldn't be loaded till you start a new game/load a save.

Turns out I had subscribed to some mods thru the website mod manager that weren't compatible with the console version.

Unsibscribed and the game loaded up just fine!

I don't remember subscribing to mods on any website. Only on the console itself. Mind providing me a link so that I can check it out?

Thanks for the link. I went there and unsubscribed to all the mods and now the game works perfectly.

As requested, I'm attaching a screenshot of what my mod list looked like before unsubscribing to them.

Just realized that you're the mod creator. Yes, those construction ones really help me out when trying to be specific on where I build. Kudos on those and wish you well on your future projects my dude!
