First and formost, so far what i read about this product I really like.

One of my gripes about the "Previous" games is when an event fire it locks every thing up so tight where you can't go and research what will actually mean to me. An example is the old german event where the affair happens to one of my council members...do I "kill" him off or is that the guy providing IC +10 and I don't want to lose that special guy. If the lockup is neccessary can we have the names be hypelinked so we can see who he is and who will replace him. Can we hide event like windows then make them reappear? So we can se the impact. Locking the time until we respond is one thing. Locking up the game is another.

How about surrenders events...are we going to get just a long list of provinces or are we going to be able to see the map changes before we accept?

How about let us decide who gets what in our alliance...IE if Italy wants to surrender a so many provinces...when it displays who gets what, allow us to get who gets what with + or - to change them with who is availiable to get the areas. Maybe you want some of the provinces but not all. Also show the "hits" you will take
when accepting the offer....like badboy points etc. The less we accept the less "hits" we should take. Also diplomacy should be adjusted who gets what and could be to each country involved.

There is so much about surrenders that could and should be changed and discussed.

That's some pretty good ideas here, especially the minister info thing and the surrender province map.
It would also be nice if the peace contract system would be reworked the way that if you offer your enemy peace, but he refuses your offer under certain circumstances; and the AI would then answer, for example, we don't agree, but if you let us keep this province or this one, we would agree. So that you don't have to make a new offer and adjust everything again, if you know what I mean.

Another thing that I think would be nice is if when using the insist on demands option for surrender (if that even still exists in this game) that you could see the map and select the provinces that you want, instead of looking at the map, writing down all the names, and then going to the diplomacy screen and selecting them all from a list. I wouldn't actually use it all that often, but it would be nice.

That's already handled. Insist on demands automatically adds to the list of demanded provinces all provinces you have cores or claims set. ;)
As for the map it is viewable and scrollable in the background on resolutions above 1024x768

Yep, the claims are very useful for planning peace terms in advance.
