I'm playing the USA.
Each time I make a landing in Europe, my allies send in a ton of divisions. So many that the supply can't support all the troops. I then find both my divisions and my allies divisions not able to fight effectively vs full supply enemies. Is there a work around for this problem? I would be fine with a way to prevent any allied troops from offloading divisions in a port I conquered so I could just manage my troops vs supply levels correctly.

This is a well-known issue. The AI is programmed to send troops to any country that has less total divisions than their own country. Normally, if you have supply issues you would build ports and infrastructure, however you might have noticed that you can't do this when you land in France. This is because the territory you liberate from Nazi Germany automatically goes back to French control.

You could build a lot of divisions so the AI won't send troops to your borders, but this won't work in this case because the beachehead is held by France. You could become faction leader, request the troops as expeditionary forces, and move them elsewhere. This is possible for the USA or the UK, but not for any other country. Ultimately the supply system is completely broken and long overdue for a rework

There's a border avoidance tool on the workshop that allows you to tell allies to avoid certain fronts. It will disable achievements, but quick use after your landing can prevent the AI from joining the new front.

One advice that's often given in response to your question is: don't join the Allies. Or in more general terms: don't join a faction.

IMHO that's not a satisfactory solution, but to be fair it completely solves the issues of overcrowding, supplies, and territory ownership.

Well, I'd hate to see how you would describe the supply system if it actually caused the game to crash or cause game features to not function.

Totally agree!

Such simple things, like luring the enemy into "pockets" are impossible, when you have faction-member-troops on your front.
