I was enjoying a great game as Scotland (just formed Great Britain) when I decided to take a look around the map.
I was mostly shopping for allies when I noticed that Greece looks decidedly not green.

Imagine my surprise when I saw that AI Byzantium was able to kick the snot out of the Turks.
what?

When i clicked on them I was even more shocked to find that they... Byzantium... was sunni...

I am so confused as to how the AI pulled this off... especially sense I've been having so much trouble with surviving as the Byzantines.

I had the Byzantines convert to Sunni in the 10th century in a recent Old Gods game. I'm not sure how it happened. Maybe they just gave the heir to a muslim tutor to raise?

In my Tuscany game I saw Ottomans losing a war badly against Mamluks and the hordes, rebels and Mamluk blockades pushed them up to 20 WE, they had no manpower left and every single province was besieged by rebels. Byzantium ended up getting most of her provinces back (was Orthodox too).

So it's not impossible, just unlikely. Check the province history of Constantinople and you'll probably be able to see what happened.
