Most of Western Anatolia provinces should have Greek culture, but that might weaken Ottomans even more, so let's just change Smyrna.

The city: yes, but I think OP is talking about the province. I believe it should still be greek. This has been suggested multiple times already. The thing is, during Timur conquests in the 1400s, a majority of the christian population of Smyrna was masaccred and they only returned there following the migrations in the Ottoman empire way past the game's start date. There was definitely no Greek majority in Smyrna in 1444.

Btw from wikipedia:
In 1402, Tamerlane stormed the town and massacred almost all the inhabitants. The Mongol conquest was only temporary, but Smyrna was recovered by the Turks under the Aydın dynasty after which it became Ottoman, when the Ottomans took over the lands of Aydın after 1425.[19] Greek influence was so strong in the area that the Turks called it "Smyrna of the infidels" (Gavur İzmir).[20]

(...) Stay away from populist approaches.
I think the issue is that, there is definitely still a greek population in anatolia in 1444. The numbers are unsure, and if its dominant culture in certain area is also uncertain.
But would it make sense to add at least one province in Western Anatolia with Greek culture?
I think so, sure it may not have been the majority, but there are enough greeks in anatolia to justify at least one province being greek. It's one of the reasons why I feel maybe a jewish culture somewhere in poland or lithuania makes sense as well.
