If you want something challenging, but not too hard, Scotland is alot of fun. Assuming you dont give them alngo-saxon culture, the problems of religion coming from English provinces you annex will keep you busy for awhile.

North African nations, as were said before, are a lot of fun. Go with one of them. It'll give you a good game with a fairly solid challenge. And you'll be close to Europe to watch the action so you don't get too bored.

Delhi's okay, has a few revolt events, but then again I haven't played them for more than a century. It's fun to rub elbows with Timmy (nickname I give to the Timurids)/The Mughals.
Beware Vijayanagar's revolt events!

I didn't know was possible to do the former:How do you do that?

and how is ethiopia?

Speaking from my experience with Ethiopia...not too bad. Once you crush the Nubians, try to push to the Med and grab Alexandria (good luck with the Mams and Turks

I play each nation in a separate GC. I play ten years with one nation, then the same with the next nation, and so on. You get the picture

Did you try to play like that every majors (the 6 biggest)? Shouldn't be a kind of fun to play France and then to switch to England etc..
this could lead to potentially interesting situations... if you fairplay all countries following long-term strategic plans: It could even lead to the actual historical situation
btw, wondering: does smby know if it's somekinda possible to play two or more countries at the same time?
