Unfortunately for me, my laptop decided to not start the day AoW was released, so I had to send it for repairs before I could even get a chance to look at the shiny new map, let alone play. But I should be getting my laptop back in a couple of days, and I think I want to play an Indian nation and form Hindustan and possibly get the Silk Achievement.

Firstly, with the much larger number of provinces in India and the apparently now stronger rebels and the autonomy system, will conquering all of India to form Hindustan be feasible? Also, according to the tade good map on the wiki, I would need an empire stretching from Turkey to China to have all the Silk provinces. Is this feasible, and if so, what's the best Indian country to do it with?

I'd recommend Vijayanagar, personally, because you only have significant enemies to the north of you - everything south of you is friendly and/or OPMs - and it's a fun and interesting fight bringing Hinduism back to the subcontinent, although I wouldn't bother forming Hindustan because Vijayanagar's starting colour (yellow) is prettier.

I'd conquered most of the subcontinent by the mid-16th century in 1.7.3, playing conservatively, and I'm not a really adept player of EUIV, so I'd imagine that it's possible in 1.8 for someone who's created empires like those in your sig. Just take Religious or Humanism and ramp up the autonomy on wrong culture/religion provinces if the look like they're going to be a problem, and you should be golden (literally, given Vijayanagar's colour). At least you know when revolts are going to happen with the new rebel mechanics.

Rebels are a non-issue right now. I conquered all the minors around me as Ethiopia and had like 3 uprisings. Take Humanism and you're golden. I'd take a nation in the east or south of India. Don't border the Timmies until you have a large enough power base. Vijayanagar starts with 20% religious unity. So that'd probably help with all those muslim provinces.

It's a pretty major difference. :p

But you, as a Hindu, have a relatively high tolerance for other religions anyway, so you should be fine as Vijayanagar even once you start eating Muslim provinces.

Well 20% as in "20% extra unity from traditions". Tolerance is nice and all. But religious unity below 100% will still negatively affect your RR. And since local autonomy is a thing now, every bit of reduced unrest is precious, since you can lower autonomy easier.
