So I was Waking the Tiger as China.
It was November 1941 and with the Allies' help I had pushed the Japanese out of the mainlaind except for the southern tip of Korea when out of the blue the game tells me that I have signed a white peace with Japan. What the devil? I'd never accept that.
Does anybody else have experience with forced white peace or have any idea why it would happen?

That is a scripted event which happens, if Japan looses nearly all the ground on the mainland. The White Peace triggers and Korea will be released. Idk if it's WAD that Manchouko also become independent after it, although you hold the land of it for a short amount of time before it suddenly plops out.

In a game as Manchukuo where I had been released because of the democratic civil war, once I declared war and took Japan's mainland possessions there was an event which offered me a white peace (well, I took the mainland possessions and Taiwan) or I could carry on with the war

Most likely you were not the war leader (generally Great Britain for the Allies). Whenever Japan is forced off the mainland (or almost entirely off the mainland, I had it happen with a small bit of Korea still under their control) they offer a white peace to the war leader. This is actually somewhat problematic, as for example if you are Nationalist China and have already annexed Yunnan and Guangxi Clique, with the other warlords and Communist China in the East Asia Co-Prosperity Sphere with Japan, and you have occupied all the land of all those nations, Japan's white peace also includes the warlords and Communist China so that they get their pre-war borders back, but leaves them in the faction. Mengkukuo and Manchukuo both become your territory though. It happened to me and I was quite mad, because I didn't have the tech for an air or naval invasion of Japan any time in the foreseeable future so I accepted. Very frustrating, since I effectively had all of China united under my rule before that peace.

So I went ahead and used console commands to annex the other Chinese states so I could continue my game, and as soon as the truce expired Japan instantly went back to war with me. Japanese surrender events need some work.

This is pretty much the same as I had, and what Rider_of_Doom said sound quite probable. Damn scipted peace and damn war leader system, messed my victory up good.
No matter, I can still take over Japan by demanding their subjugation.

I examined the code and discovered that it's quite sloppy. It just gives all occupied Japanese (and MAN/MEN if they're subject of JAP) territory to the occupying forces and release Korea. There are just too many ways it can go wrong.

Ideally, the event should be written to handle all Chinese core states owned by Co-Prosperity Sphere members.

Yeah I also made a bug report about Chinese factions in the Co-Prosperity Sphere not working properly with the White Peace. I like the idea of Japan giving up when booted off the mainland, but the implementation isn't fantastic. The Kaiserreich mod has a similar thing that is supposed to happen, but in my pre-WtT Qing game it didn't work right either. There are a lot of variables involved so I am not surprised that it has proved to be a tricky thing to implement.

I just played a game as China, Manchukuo didn't get released after I accepted the white peace, only Korea got released and I annexed everything else on the Mainland + Taiwan.

I think the issue with Manchukuo arises if they go for their independence war and don't get crushed by Japan. Also if Manchukuo is planning on doing the independence war, they probably shouldn't have large chunks of their army fighting out in places like Xibei San Ma or Sinkiang, but I'm not sure how you would program the AI to do that.
