First off, I'm quite enjoying the demo and really excited about the full release on Tuesday - this game is fantastic and it's hard to see myself going back to EU3 after the improvements here, especially once the inevitable expansion is released pushing back the start date.

My one minor nitpick right now is the striped borders on the political mapmode. Personally, I think the map is "busy" enough as it is, and the striped borders are a real eyesore. I much prefer the way the political map looks on the country selection screen, since for some reason the countries have solid-color borders there; I'd love to see an option to choose between this, the default striped borders, and maybe also a "classic EU3 style" with just the thick black borders.

Another possibility could be an option to enable a light, semi-transparent overlay on the terrain mapmode with the country colors, if that makes sense. If that was a possibility, I'd probably just play on the terrain mapmode since it's very pretty.

And yes, I'm sure there will be a mod to change the borders, but would having even a minor cosmetic mod like this make the game count as "modded", therefore disabling achievements and MP with the vanilla game? I'm not really sure how this works.

Funny, I was about to start a thread to say the opposite. Every other map mode (including political, as you mention) has a nice, distinct checkered border except the terrain map which has the plain color. 18 map modes with easy to read stripey borders, and yet one with hard to differentiate plain ones! And that mode of them all?

The terrain's the one you need the checks the most!

To each his own, certainly...that's why I wish it was an option to change the border style depending on your preference. And yes, this should be for the other mapmodes as well as the political map, so that you could have the checkered borders on the terrain map just like in CK2, if you wanted.
