I offered them a crisis offer as they joined France, meaning they were on both sides. I was better than the French and Russians so they would accept a crisis offer but I wondered what would happen (Crash or something, but I got this!)

So basically by winning the war you will get reparations from UK even though they are on victorious side

Reload it as UK and add a wargoal for yourself against yourself. And then try to occupy London.

I had a similar war as Germany. I was the crisis leader and I didn't want to loose, so I invited Austria to my side for a Russian region. However, the same day I did that, they entered the dark side. I thought: "Well, they can't fight on both sides, so when war comes, they will pick my side." I was wrong... It was a very interesting war, but no matter how much war score I got, I just could not enforce Austria's wargoal against the Russians.

Yes, and I tried my best to not kill their armies and steer them towards Russia. I had to have an army to recapture the territory Austria occupied.

Not sure what happened with Germany. I'm guessing Bavaria formed it but I don't why Baden wasn't included then.

Almost. The Crown to the gutter will be offered to a German great power that is not Austria or Austria-Hungary (Israel is ok though). If they accept, all German nations that are either in their sphere or independent will get an option to join.

For some reason Germany formed but never got cores on Alsace-Lorraine...

and Germany and France are best buddies since then, the later even helping the former to get its cores back !
