To get the forum specific items, no. The other stuff will be delivered through Steam no matter if you linked your Paradox Account or not.

Definitely at least try the demo here for EU4. This game is in a lot of ways similar to EU4 in the sense of its layout, but at least give that a try, and just learn the mechanics of the game and especially resource management. It'd be great practice, and it is good that you have some experience with Civ, too! Not much, but it is a start! Either way, if you like it, great! If you don't, then maybe Stellaris will be different! c:

Looks like physical copies will be released later. Another shop which sells physical copies states the release date 25.05.2016.

It would be really cool.
Not only because doing artificial scarcity on digital content is... Well... Weird. But also because I can guarantee you that there will be quite a few sales of this from people who can't afford going Galaxy right now. (My girlfriend and another friend of mine, for example.)

Perhaps doing something like the EU4 "Premium Upgrade Pack" without the forum bonuses after launch? That way pre-order customers still retain that "exclusivity" feeling.

They're ebooks.
For the novel, out of the item description: "Download and read on epub, mobi (Kindle) and PDF."
And the Digital Collector's Book is... Well... Digital. Just like the Digital Soundtrack is digital and you're not getting a physical CD.
