Stellaris how to conquer

Ok so I've been playing Stellaris pretty much since it came out since it looked really awesome and I've gotten into a couple of wars with someone weaker than me, but here's the problem they surrendered and that's it, there was no option to continue thew war, it's like in total war games yeah peace is nice if they're winning but if your winning then you don't accept the peace until they're all dead, why can't I wipe out the other factions? is it just something I'm doing wrong or is it not in the games system?
