Are planets just planets or ate they made up of"provinces" as one of the previews seemed to imply with sinkholes
The RPS preview also mentioned building plots, with some blocked by terrain features. I believe the planetary interface will be quite 4x like, but it will also mean that land battles could be interesting in real time.

I'm curious about average number or species in the galaxy.

This is still being tweaked, but it will of course depend on the size of the galaxy you're playing in. Our aim is to strike a balance between offering enough room for players to explore and expand in the early game, and enough empires to make the galaxy feel like a busy and populated place at later stages.

Will there be a option in the start screen? Something like this:

As we saw a game with 500 stars and know the max is 1000 it's logical to conclude it's a slider, but I believe the species generation is random judging by comments made, and based on the number of stars.

Can we have sort of a sandbox scenario like we had in Europa Universalis 2 -- we could start out as one of 8 opms in the world and colonize till world gets filled -- with only one instance of each phenotype? This would result in very-very long early game, and only with a late game, no mid-game where small empires conquering and forming unions.

Probably opposite to opinion of many people, I honestly hope that this game won't be a typical 4x space game. I would rather see something similiar to EU placed in space universe and with new features. Hopefully diplomacy will be as important as militarism (or even more).

They mentioned that the game starts with the typical 4x scenario, you start with one planet and colonise space. Then, when all star systems are filled the game transforms into a more Europa Universalis-like play style.

Yes that is a very good question. With Crusader Kings on Tuesdays, EU4 on Thursdays and HOI4 on Fridays, Stellaris will need dev diaries on either MOnday or Wednesday.
