So I got this on steam, but when I launch it from steam, it directly runs the game without going into the EU3 launcher first.I know I can get the launcher by launching it from the folder, but then I don't get steam in-game stuff. So anyone has an idea how to set up the steam launch to launch the EU3 launcher instead?

If you go into Steam, and click "Add a non-steam game", you can browse for the .exe file in the C:/../steam/steamapps/common/Eu3 and add that, and then run it through steam. If you want to use mods, you can either add Eu3.exe to get the mod-switch system or you can add eu3game.exe directly. If you want to use the latter system but want mods, you simply change the shortcut to read (by right-clicking it on the steam menu) to "C:\<path to Eu3>\eu3game.exe -mod modname".

Not sure about the mac version. May be like the linux version, where you create a launcher for a bash script that launches Eu3.
