I want to download 1.8, but I bought the game through Steam and nothing's showing up in the Product Updates screen. Do I need to wait a few days or something?

What do you see in the lower-left corner of the main menu when you run the game? Normally the game is updated automatically either when you run the Steam client or when you run the game.
That's exactly how it works and is supposed to work, with all your games in Steam.
