My Lunatic ruler spawned a horse chancellor so I figured why not see what happens when I remove Celibate trait? No centaurs so far but I worry about the poor wife.

You won't get a centaur, but the kids have a 50% chance of being horse ethnicity. There's no child horse portrait, so if it's default west European portrait, it's a horse (I believe)

There are some great stories about people turning their dynasty into horses and taking over the world as horse (there are tricks to do so without the command console)

Oh I have a west european portrait, when it grows up it will be a horse portrait too? Cool. How would you get around celibacy without console?

I don't completely understand it, and I'm sure someone will come along shortly that does, but the gist of it is that you can circumvent the horse trait (that stops you from giving the horse any titles) by nominating them for a temple holding (as catholic). When they inherit the temple, they become a ruler.
A new ruler will spawn courtiers in it's court, matching it's culture, religion, and ethnicity (in this case: horse). These spawned horses don't have the horse trait, so you can invite them and give them land, and mix their blood with your dynasty, until you have a pure horse line.

In addition to the investiture loophole mentioned earlier, you can have Glitterhoof educate your heir with Heritage focus to get them to adopt Horse culture. Then once they inherit, you can use the employment decisions ("Present Debutante", "Invite Holy Man" and so forth) to create Horse courtiers who will have the default Horse ethnicity but not the Horse trait with all the penalties.
