Having been on holiday to Wales recently, I'd like to start a new game set there? I know there have been lots of mods affecting Wales - which would be the best one to use? I'm guessing DVIP - Wales. If so, do I just drop that over DV vanilla?

Yes, DVIP standard has corrected Welsh dynasties as of the start dates, and updated generic dynasties.
However I recommend DVIP: Wales and the TASS mode as both offer the updated maps as well. I personally play with DVIP Wales 4th Crusade as it allows play as Llywelyn the Great... though the final updateing for that has yet to be included.
